Its hard not to get excited about meat. And there is no greater celebration of meat than the Carnivores Ball being held in April in Melbourne. Founder and curator of the events in Melbourne and Sydney is the inimitable Jess Pryles. You know her as Burger Mary and she is a BBQ judge among many other things. She was once a DJ and I think she also dabbled in heavy metal.
Fraser Stark from the Duke of Wellington Hotel couldn’t be more different – a quiet fellow from Scotland, he calls Melbourne home now and is the head chef at the Duke. They are celebrating fondue for the Melbourne Food and Wine Festival and Fraser is in to share his secrets.
